Cucumber, Avocado, Tomato & Feta Salad

A go to garden recipe, its fresh, full of vitamins & antioxidants, and a perfect salad for summer days!

Materials

  • Large bowl

Ingredients

  • 1 cucumber

  • 2-3 tomatoes

  • 1 avocado

  • 2 cloves garlic

  • 4 oz. feta

  • 1 lemon

  • 3 sprigs of dill

  • 1/2 tsp red pepper flakes (opt)

  • Olive oil

  • Salt and pepper

Instructions

Read through the entire recipe before getting started. Wash and dry all produce.

  • Remove ends from cucumber cut in half and slice into thin half moons. Small dice tomatoes. Remove dill leaves from stems and rough chop. Mince or grate garlic. Cut avocado in half and small dice. Zest lemon, cut in half and juice. Crumble feta cheese.

  • Mix lemon juice, 1 tsp. lemon zest, 1/3 cup oil, chopped dill, garlic, red pepper flakes (optional) and a pinch of salt and pepper in the bottom of a large bowl. Toss to incorporate.

  • Add cucumber, tomatoes, avocado and feta cheese to bowl. Toss to coat salad with vinaigrette. Taste salt and pepper and adjust if needed. Enjoy!
